Bangers and Mash with Mushroom Onion Gravy The Ultimate British Comfort Food
A hearty and comforting dish featuring juicy sausages served over buttery mashed potatoes blended with tender cabbage, all topped with a rich mushroom onion gravy. This rustic, flavorful meal is perfect for family dinners or cozy nights in.
Ingredients
Method
- Place the potatoes in a large pot of salted water. Bring to a boil and cook for 15–20 minutes, until fork tender.
- In a separate skillet, heat olive oil over medium heat. Add sausages and cook, turning occasionally, until browned and cooked through. Remove and set aside.
- In the same skillet, melt butter over medium heat. Add chopped onion and cook for 2–3 minutes. Add garlic and mushrooms, cooking until mushrooms are browned and tender.
- Sprinkle the flour over the mushrooms, stir, and cook for 1 minute. Slowly add broth while stirring, then add Worcestershire sauce. Simmer for 5–7 minutes until thickened. Season with salt and pepper.
- While gravy simmers, steam or boil the cabbage for 5–7 minutes until soft. Drain and set aside.
- Drain the cooked potatoes and mash with butter and milk until smooth and creamy. Stir in the cooked cabbage and season with salt and pepper.
- Serve the sausages over a bed of cabbage mashed potatoes, topped with warm mushroom gravy.
Notes
- Use beef, turkey, or plant-based sausages to suit your diet.
- For a vegetarian version, swap in veggie sausages and use vegetable broth.
- Add fresh herbs like thyme or rosemary for extra flavor.
- Leftovers reheat well—store gravy separately for best texture.
- For a festive twist, serve with caramelized onions or crispy leeks.

This recipe is fantastic and very simple! Highly recommend!
I made it with wild pig brats and hen of the woods mushrooms.
The gravy is plate licking good! I plan to use it on other dishes.
Thank you,
