- Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
- In a skillet, heat olive oil or butter over medium heat. Sauté the chopped onion for 2–3 minutes until softened. Add garlic and cook for another minute.
- In a large mixing bowl, combine the cooked rice, shredded chicken, broccoli, sautéed onion and garlic, cream of chicken soup, sour cream, milk, 1 cup of the cheddar cheese, paprika, salt, and pepper. Mix until everything is well combined.
- Pour the mixture into the prepared baking dish and spread evenly.
- Sprinkle the remaining 1/2 cup of cheddar cheese over the top. Add Parmesan cheese if using.
- Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10–15 minutes, or until the cheese is bubbly and slightly golden.
- Let it rest for 5 minutes before serving.
