- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.
- Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
- In a large bowl, combine the spinach mixture, diced chicken ham, shredded cheese, garlic powder, salt, and pepper. Mix until well combined.
- Roll out the pie crusts on a lightly floured surface. Using a round cutter or a glass, cut out circles (about 4-5 inches wide).
