- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan or line with parchment paper.
- Press the sugar cookie dough evenly into the bottom of the pan to form the crust. If using, press in holiday sprinkles. Bake for 10 to 12 minutes, until lightly golden. Remove from oven and let cool slightly.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition. Mix in vanilla extract and sour cream until combined.
- Pour the cheesecake filling over the partially baked crust and smooth the top.
