- Preheat oven to 350°F (175°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
- Spread the mini pretzels evenly over the baking sheet in a single layer.
- In a saucepan over medium heat, melt the butter and brown sugar together. Bring to a boil and cook for 3 to 4 minutes, stirring constantly, until thick and bubbly.
- Remove from heat and stir in the vanilla extract.
- Carefully pour the toffee mixture over the pretzels, using a spatula to spread it evenly and coat as much of the pretzels as possible.
- Bake for 8 to 10 minutes. The toffee will bubble and spread further over the pretzels.
- Remove from the oven and, if desired, sprinkle with a small amount of sea salt.
- Let cool completely at room temperature. Once the toffee hardens, break into chunks.
- Store in an airtight container at room temperature for up to 1 week.
