- In a small bowl, dissolve the instant coffee or espresso powder in 1 teaspoon of hot water. Set aside to cool.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the egg, vanilla extract, and dissolved coffee mixture. Beat until smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms. If the dough is sticky, chill for 30 minutes.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll the dough into tablespoon-sized balls and place on the baking sheets. Flatten slightly with your hand or the bottom of a glass.
- Bake for 9 to 11 minutes, or until the edges are just set. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
- Once cooled, optionally drizzle with coffee glaze or dip one side in melted chocolate.
