- In a small bowl, dissolve the active dry yeast in warm milk and let it sit for about 5 minutes until foamy.
- In a large mixing bowl, combine the sugar, eggs, melted butter, and vanilla extract. Add the foamy yeast mixture and mix well.
- Gradually add the flour and salt, mixing until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
- Once risen, roll out the dough on a floured surface to about ½-inch thickness. Use a round cutter to cut out circles and place them on a lined baking sheet. Cover and let them rise again for 30 minutes.
- Heat vegetable oil in a deep pot to 350°F (175°C). Fry the donuts in batches until golden brown on each side, about 1-2 minutes per side. Transfer to a paper towel-lined tray.
- While still warm, roll each donut in granulated sugar until fully coated.
- In a bowl, beat the cream cheese until smooth. Add powdered sugar, raspberry jam, and vanilla extract, and beat until creamy and smooth.
- Fill a piping bag fitted with a round tip with the raspberry cheesecake mixture. Poke a hole in the side of each donut and fill generously with the cheesecake mixture.
