
Easy Cabbage Roll Soup – Hearty & Comforting One-Pot Meal
This cabbage roll soup is everything you love about classic cabbage rolls—made easier! Hearty, flavorful, and filling, it’s a cozy one-pot meal perfect for cold days or meal prep.

- In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
- Add the diced onion and garlic. Cook for 2 to 3 minutes until softened.
- Stir in the chopped cabbage and sliced carrots. Cook for another 5 minutes, stirring occasionally.
- Add the diced tomatoes, tomato sauce, beef broth, uncooked rice, thyme, paprika, salt, and pepper. Stir well to combine.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 25 to 30 minutes, or until the rice and vegetables are tender.
- Taste and adjust seasoning if needed. Serve hot.
