Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry just slightly to smooth any folds. Cut into 4 equal rectangles.
- If using, spread a thin layer of Dijon mustard in the center of each rectangle.
- Layer each piece with 1 to 2 slices of chicken ham and a generous handful of shredded cheese, leaving a small border around the edges.
- Fold the pastry over to form a pocket (either triangle or rectangle) and press the edges with a fork to seal.
- Transfer to the baking sheet. Brush the tops with the beaten egg.
- Bake for 15 to 20 minutes, or until puffed and golden brown.
- Let cool for a few minutes before serving.
