- n a large soup pot or Dutch oven, cook the turkey bacon in olive oil or butter over medium heat until slightly crisp. Remove a few pieces for garnish if desired, and leave the rest in the pot.
- Add the diced onion and cook until softened, about 4 to 5 minutes. Stir in the garlic and cook for another 30 seconds.
- Add the chopped cabbage and cook for 5 minutes, stirring occasionally, until it begins to wilt.
- Stir in the diced potatoes and pour in the broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for 20 to 25 minutes, or until potatoes are fork-tender.
- Stir in the milk or half-and-half and heat through without boiling. Season with salt and pepper to taste.
- Ladle into bowls and top with reserved crispy turkey bacon and fresh parsley if using.
