- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the bottom with foil if baking in a water bath.
- In a bowl, combine the crushed cookies and melted butter. Press firmly into the bottom of the springform pan to form the crust. Bake for 8–10 minutes, then set aside to cool.
- In a large bowl, beat the cream cheese and sugar until smooth. Add vanilla extract and mix.
- Add eggs one at a time, beating well after each addition.
- Mix in the sour cream and peanut butter until fully combined and smooth.
- Gently fold in the chopped Reese’s Peanut Butter Cups.
- Pour the filling over the cooled crust and smooth the top. Bake for 55–65 minutes, or until the center is nearly set.
- Turn off the oven, crack the door, and let the cheesecake cool for 1 hour inside. Then refrigerate for at least 4 hours or overnight.
- For the topping, heat heavy cream until hot but not boiling. Pour over chocolate chips and let sit for 1 minute. Stir until smooth and let cool slightly.
- Pour the ganache over the chilled cheesecake and spread evenly. Garnish with more chopped Reese’s on top if desired.
- Chill until the topping is set, then slice and serve.
