- In a large bowl, cream the butter and sugar until light and fluffy.
- Beat in eggs, vanilla, and almond extract if using.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet mixture alternately with the sour cream, mixing just until combined.
- Divide the dough into two portions, flatten each into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- On a floured surface, roll out dough to about 1/4 inch thick. Cut into desired shapes using cookie cutters.
- Place on prepared baking sheets, spacing about 2 inches apart.
- Bake for 8–10 minutes, or until edges are set but not browned. Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat butter until creamy. Gradually add powdered sugar, vanilla, and milk until smooth and spreadable. Add food coloring if desired.
